What is a ricecooker?

Description

The preparation of rice is a delicate task, which requires precise timing. A mistake of cooking can produce rice too hard (not quite done) or, conversely, in the baking absorption (that is to say by putting just the right amount of water initially and covering) the may attach to the bottom of the pan and take a taste burnt. Self-rice cooker avoids these drawbacks by making a continuous monitoring and automatic temperature and cooking time. Its purpose is not to reduce the cooking time of rice, but simplify the task of the cook and the duration of operations.

Utilisation

Rice cookers are often supplied with a measuring cup and spatula (shamoji) to serve the rice. For perfectly cooked rice, just pour the right amount of rice water in the container, using the measuring cup, and position the switch to “cook”. The pressure cooker can also be used as a steam cooker. We put water in the bottom of the container, then peeled and cut food in a steam basket (included on the model of the pressure cooker) placed at the top level and allowed to cook. There are however several ways of cooking, according to the specialties of World Regions:

  • In Asian cuisine, rice is mixed in 2 to 3 times its volume of unsalted water. It becomes sticky, which is convenient to eat with chopsticks.
  • In Japanese cuisine, including the preparation of sushi rice is mixed with rice vinegar before cooking.
  • In French cuisine, rice is cooked like pasta, that is to say, immersed in boiling salted water, covered for 10 minutes.
  • In the kitchens of the Middle East and Central Asia, used cooking “pilaf” which is to cook rice in a volume of fat (olive oil or butter) until-that grains are translucent. Then added 1.5 to 2.5 parts water depending on the type of rice. Then let the rice cook covered over low heat until the total absorption of water.

Operation

A thermostat limits the temperature to 100°C (otherwise the water can boil at a higher temperature if the pressure is higher than standard atmospheric pressure or to a lesser extent, if it is salty). For perfectly cooked rice, just pour the right amount of rice water in the container, using the measuring cup, and position the switch to “cook”. The pressure cooker can also be used as a steam cooker. We put water in the bottom of the container, then peeled and cut food in a steam basket (included on the model of the pressure cooker) placed at the top level and allowed to cook. Maintaining at 65°C approximately guard rice warm until use.
